Basic Paleo Chicken Salad


chickensalad1Ugh, I have a stinking head cold that is making me angry.  I don’t do sick well.  I’m kind of a baby about it.  That’s why I’ve been MIA for a few days.  I’ve been sitting in the recliner watching Royal Pains on Netflix instead of cooking or doing chores or blogging.  I did get a really great run in this weekend though.  I know you’re on the edge of your seat to hear about it!

Oh, and we tried the cow!  T-Bones.  Man they are like butter.  Don’t be jealous just get you a grass-fed bovine and we can talk about how great it is!

Moving on.  I have a yummy chicken salad for you today.  I did not reinvent the wheel with this thing.  I’m sharing with you how I make my chicken salad.  It’s basic and simple but sometimes that is all you need.  Really, I want you to see this mayo recipe.  It’s from  She is my favorite paleo blogger.  Her recipes are also great, she uses everyday food that is easy and tasty.  People get weird about making homemade mayo but I’ve been making this for a while now and you cannot tell the difference.  Plus, you feel pretty cool when you brag about the mayo being homemade.  Then, from the mayo you can make this ranch.  Ah, the world is a better place!

So even with a head cold I got 19 miles in on Saturday morning.  Yay!  That’s a lot for me!  The crazy part was, we had a social run at 7:00am with the area running clubs so we had to be done by 6:30.  We started at 3:30am.  Yep, my alarm went off at 2:30am.  That is not morning folks.  Hmm, I wonder why I can’t shake this head cold??  We decided no matter the outcome of New Orleans no one can question our commitment.  Maybe sanity, but not commitment.

 We started out with 16miles then met up with the other runners from the other clubs for the last three.  I was dumb and cold and did not get a picture with everyone else, only my friends.  Nice huh.  Anyway, there were two ultra runners there.  One was Molly Sheridan, who wrote “Running Past Midnight.”  She has ran over 50 ultramarathons.  She STARTED running at 48 years old.  She made a great point saying that she had that friend who nudged her to run her first mile which was AWFUL.  It always is.  Now look at her!

The great point is that the first mile is always the hardest.  If you have thought about running, or have just started, remember that you are totally capable.  It WILL NOT be easy but so incredibly worth it.  The distance or speed is not important.  The fact that you are tapping into your God given super power is.  Once foot in front of the other.  You can do it! 

Unless, you’re my mom.  She started out on her feet but finished the run on her face.  No worries, I’ll get her to try again right side up.

Basic Paleo Chicken Salad

  1. whole rotisserie chicken cubed
  2. 3 celery stalks diced small
  3. 1/2 granny smith apple diced small
  4. 2 tbsp. onion diced small
  5. 1/4 cup of chopped walnuts
  6. 1/2 lemon
  7. 3 heaping tbsp. of homemade mayo from link below
  8. 1 tbsp. yellow mustard
  9. salt and pepper to taste
  1. Combine chicken, celery, apple, walnuts and onion in a large bowl.
  2. Squeeze lemon juice over ingredients.
  3. Stir to distribute lemon juice.
  4. Add mayo, mustard and salt and pepper.
  5. Fold to incorporate all ingredients.
