As promised The Baker’s brownie recipe.  They are so yummy.  My kids loved them and that is always the test.  Even Paleo treats don’t get by them unless they are good.  The ingredients are simple as well.  Take them to a potluck or whatever and no one will know the difference.  Probably be good with some walnuts too.

This week I’m officially back to the grind.  My arms pits are so sore I can barely put my hair in a pony tail.  Dang Crossfit!  I said I would go back 100% after the race and I have.  I had no idea how far back I set myself from taking it easy there during marathon training.  Well, now I know.  Like I predicted, he’s not letting me be a wimp.  In a few months I’ll be a beast again…haha…was I ever a beast?  Hmmm??

 I told you before the race I was going to change things up a little.  One thing I want to do is make sure I am answering questions that you guys are asking me.  Probably the most popular question is “How do you have time to make this food?”  Well, I am blessed to be a stay at home mom so I do have that going for me.  However, I do not have ample amounts of time to spend on food.  I’m going to be completely honest with you.  TO EAT HEALTHY YOU HAVE TO COOK.  It’s that simple.  Whether it be Paleo or another type of healthy eating you have to prepare it in your own kitchen.  Sure, you can find Paleo food in restaurants but typically it’s so high in sodium it’s crazy.  Makes my shins burn.  It takes planning to get meals on the table.  Spend an extra few minutes thinking about what you are going to make and do some prep work.  It will get easier if you make it a priority.

ChopWizardcollageOne simple tool I have to speed things up a bit is the Vidalia Chop Wizard.  The Baker bought it for me for my birthday and I love it.  I chop an insane amount of veggies and it makes the process way faster.  It does take up room in the dishwasher but worth it in my opinion.  By the way, I’m telling you this because I like it.  They are not paying me to endorse it.  I wish I knew how to get companies to do that!  Anyway, chop veggies for your salad for the week and move on.  You get the drift.

Delicious Paleo brownie

Ingredients
  1. ¼ cup + 2 tsp coconut flour
  2. Pinch of salt
  3. 1 Tbs baking powder
  4. ¾ cup coconut sugar
  5. 12 ozs Enjoy Life chocolate or dark chocolate chips
  6. 1/3 cup unsalted butter
  7. 2 Tbs coconut milk
  8. 1 ½ tsp vanilla
  9. 3 eggs
Instructions
  1. Preheat oven to 325 degrees
  2. Mix together coconut flour, salt, and powder in small bowl and set aside
  3. In a sauce pan, combine butter, coconut milk, and coconut sugar under low to medium heat stir occasionally
  4. Cook until mixture just starts to boil and remove from heat.
  5. Add 1 cup of the dark chocolate chips and vanilla. Stir until chocolate is melted and smooth.
  6. Transfer chocolate mixture to a mixing bowl.
  7. Add eggs one at a time beating well after each one.
  8. Gradually stir in flour mixture then fold in remaining chocolate chips.
  9. Spread in a 8 x 12 pan and bake for 30 min

“Peanut Butter and Jelly” Waffles! And…Do Something HARD

I am so excited about these waffles!  Paleo waffles are not always the best.  Sorry, just being honest.  And, making any sort of batter is not usually in my comfort zone.  These, my dear, are delicious and so easy!  I made them for the kids and they devoured them.  Believe me, the kids don’t always like my food.  The poor hubby hasn’t gotten to try them yet.  This weekend he will get to try them as long as he makes them and has them ready when I get home from my run.  Spoiled maybe?  Nah.

Post Indian Run. Not so bad huh?

So, this morning we had a 10 mile tempo run on the plan.  We decided to make it an Indian Run.  Basically after warm up, you get in a line, run, and the last person has to run faster to get to the front and so on.  This drill is always a lot of fun, however, it is not easy.  Somehow, we run faster and faster as the miles tick away.  Running fast is freaking hard!  In spite of huffing and puffing and sweating in December we still had a blast.

Well, that got me thinking.  The marathon is getting closer.  For those who have been under a rock, a whole bunch of my buddies and I are running the New Orleans Rock ‘n’ Roll Marathon on January 25th.  Training has been significantly harder and more time consuming than I expected.  I have spent a ridiculous amount of time running and cross training to get ready for it.  As it gets closer I find myself getting a little sad about training ending.  What?!  Who is sad about marathon training ending?? 

Let me explain.   Doing something HARD is rewarding.  Think about it.  Raising these three kids I have to be productive members of society and not be butt holes is HARD.  Everyday.  But, everyday, they give me another reason to do it.  Eating a diet that not everyone agrees with and doesn’t include classic cheeseburgers is HARD, but the way I feel and thrive is worth it.  Setting my alarm for 3:20am is plain hardcore, but I get to hang out with my crazy, early bird, buddies.  They are accountable, funny, God fearing, and a bunch of tough cookies.  I consider them my family.

My point is, just because it is uncomfortable does not mean it shouldn’t be enjoyable.  Don’t shy away from something because it’s not easy.  Embrace it and make the most of it.  Whoa!  More deep thoughts by Summer.

 

 

"Peanut Butter and Jelly" Waffles

Paleo waffles with a blueberry and almond butter jam.

For the waffles
  1. 1/2 ripe banana
  2. 1/4 cup coconut milk
  3. 2 eggs
  4. 1 tbsp. maple syrup
  5. 1 tbsp. melted coconut oil
  6. 1/8 tsp. salt
  7. 1/2 tsp. baking soda
  8. 1/2 tsp. baking powder
  9. 1 cup blanched almond flour
  10. oil for coating waffle iron
For the Blueberry Jam
  1. 1/2 cup blueberries
  2. 1/4 cup coconut milk
  3. 1 tsp. almond butter
  4. 1 tsp. honey
Instructions
  1. Preheat waffle iron.
  2. Add all ingredients for the blueberry jam into a small saucepan and simmer.
  3. As the blueberries heat up smash some with a spoon to release juices.
  4. Stir occasionally.
  5. Meanwhile, in a blender add all ingredients for the waffles. Add almond flour last.
  6. Blend waffle ingredients. Use a spoon to scrap flour off of the sides of blender.
  7. Spray or brush waffle iron with oil.
  8. Pour blended batter into waffle iron careful not to overfill.
  9. Waffles only cook for a couple of minutes. They are done when golden brown.
  10. When done, use a pot holder to flip waffle out onto a plate.
  11. Top with blueberry jam.
  12. Enjoy!
Notes
  1. Recipe makes about 2 1/2 large waffles. Double if more are needed.

Sprinklers are not just for kids!

Hot Ta-Ma-Lee!!  If you walk outside in the predawn hours and see grown people in workout clothes playing in a sprinkler, please don’t shoot or call the police or anything drastic.  We promise not to mess up your yard.  It is just a real treat to come across a sprinkler when you think you are dying of a heat stroke.  I think I like them more than my children do.

I had a nice little 8 mile training run planned this morning.  It didn’t turn out as nice as I (and we) had hoped.  When I say we, I am referring to a quite large group of people who have no problem with a run start time between 4:15am and 5:00am.  Its astounding, there are so many running vampires out there.  That’s how I refer to us anyway.  We prefer the dark.  Anywho, where was I?  Hot Ta-Ma-Lee!  It was so humid we were melting!  If you are unfamiliar, humidity is our enemy!  That being said, we got it done.  It doesn’t matter where you are in your journey.  There are absolutely going to be days that seem impossible.  Finish it!  That’s where you learn what you are capable of.

Now, when I get home Every. Single. Day. I make the hubster and I two scrambled eggs a piece.  I don’t even like eggs but they are so good for you!

Eat the yolks people, that’s where the nutrients are. Yes, the fat is there but fat is good for you too!  We are just on the tip of the Paleo ice burg. One important note to add is I am a member of a wonderful, organic vegetable co-op.  In the co-op I have access to free range eggs from a local farm.  Believe me when I say you cannot beat them.  And of course every morning I take a really natural picture of myself holding a plain plate of scrambled eggs.

This weekend my little family and I have camping trip planned.  It is probably going to rain all weekend and we will be in a tent, but we love it anyway.  Camping is usually a time when you eat as many smores and oreos as you can fit in your face but not for me.  I’m training, and a weekend can do a lot of damage.   I learned that from the massive migraine I got last time.  So, I will be staying on the Paleo track mostly and taking lots of pictures so you have ideas for your next camping trip.  Most of you tent camp in the rain with a bunch of little kids right??
