Anywho…I wanted to get this Carrot Cake Smoothie posted for you.  I’m totally loving it right now.  Probably because I have an abundance of carrots and I’m able to use them quickly in this smoothie.  I told you, I’m not made of money so we waste nothing.  That’s another piece of advice I have.  In my opinion, if you’re throwing away food, you have too much money.  Just sayin.  Try the smoothie, it’s obviously cold but it seems warm and cozy.  Makes perfect sense!

In revealing my deep dark secrets yesterday I totally forgot to mention the crazy mess we have going on here.  By the way, thank ya’ll for the awesome support yesterday!  You guys rock!!  Anyway, by crazy mess I mean ice and snow.  We are Texans, we do not handle that well.  Runner’s either.  I’ll run in pretty much anything, but ice under my feet is where I draw the line.  Remember that girl who busted her butt on the news last year talking about how she likes to run on the ice.  Yeah, not here.  Because of the weather I got three good rest days.  Turns out it’s what I needed.  I’ve had a nagging hamstring/glute that keeps misbehaving.  It seems to be better.  All of the eating and sitting on my butt helped.

So the weather let up long enough this morning to head to Crossfit at 5am.  Dang I’m still so weak from the marathon.  I am, however, trying!  It seems to be getting a little better.  Here was the Wod:

-50m Shuttle Sprint

Yes, that is squatting 150 times with a 53 pound kettle bell.  Ah it sucked!  I did it though.  That’s heavier than my kids!  Don’t you think I didn’t complain, but I finished.  Tomorrow 10 miles as long as the roads are clear.  Back at it folks.

Ingredients
  1. 1/2 cup full fat coconut milk
  2. 1/8 tsp. vanilla extract
  3. 1/8 tsp. cinnamon
  4. 1 tsp. almond butter
  5. 1 tsp. maple syrup
  6. 1/2 cup chopped carrots
  7. 1/2 banana
  8. 2 handfuls ice
Instructions
  1. Add all ingredients into a blender.
  2. Blend until incorporated well.
  3. If smoothie is too thick adjust by adding a small amount of coconut milk or water.
  4. Enjoy!

Pink Powerhouse Smoothie

beetsmoothie1Oh you guys have to trust me and try this one.  My kids loved it!  You will be healthier for it, I promise!  Why is it so pink??  Well, silly, because it’s made with roasted beets!  I really love the little suckers.  They are cheap and super good for you.  And they make gorgeous smoothies, duh.  Roast a bunch the night before, then the next morning it will take you about 10 seconds to have this ready to go out the door.  Also, before you have a heart attack and think it will taste like weird health food, really it tastes like mellow bananas, with a sweet beet undertone.  So there. 

This week has been a little different for me.  I HURT MY FOOT!  Yep, 19 days out from the marathon I’m limping myself home 2 miles into a 10 mile run.  I think it’s going to be ok though.  I have this awesome chiropractor who fixed me right up on Tuesday.  My cuboid joint in my foot was out of whack.  (Who even knew I had one of those?)  It seems much better but I’m laying off of running until Saturday to give the soft tissue time to heal.  Boo!

coldcrossfitmorningIn the meantime…Crossfit!  Man it was 16 degrees this morning!  I’ve said it once before, no, there is not heat there.  Those bars are seriously cold.  I believe Monday I referred to the toes to bar workout as a cold day in hell.  Thankfully today we stayed far away from them with our gloves on. 

 

The wod (workout of the day) was:

6 Min AMRAP (as many reps as possible):
-6 Wallballshots,  20/14#
-6 Goblet Squats, 53/35#
Then,
6 Min AMRAP:
-Double Unders
Then,
6 Min AMRAP:
-6 Burpees
-6 HSPU (Hand Stand Push Up)

I rowed instead of doing double unders with the bum foot and all.  That stinks.  Double unders are the only good thing I have going for me there.  Whatever.

So, my Crossfit box is changing.  The new name is Form and Function Fitness.  We are still having the typical Crossfit wods everyday but he’s also added power lifting, the running club on Wednesday morning and I’ve heard rumors of yoga.  It’s all very exciting.  For those of you in this area, there is a pretty good promotion going on now.  If you’ve wanted to try it, now is the time.  By the way, he didn’t put me up to this little plug.  It’s my blog, I do what I want.  However, I love to see new people come through the door.  It’s made a big difference in my life.

Pink Powerhouse Smoothie
Simple smoothie full of nutrients

Ingredients
  1. 1 tbsp. olive oil
  2. salt and pepper
  3. 1/4 cup roasted beets
  4. 1 cup unsweetened coconut milk
  5. 1 tsp raw honey
  6. 1/2 frozen banana
  7. 1/2 scoop chocolate protein powder
To roast beets
  1. Preheat oven to 400.
  2. Scrub beets to clean then cut off both ends.
  3. Coat in olive oil and salt and pepper.
  4. Roast covered in oven for about 45 minutes or until tender.
  5. Once beets have cooled remove remaining skin.
  6. Refrigerate until ready to use in smoothie.
For the smoothie
  1. Add beets, coconut milk, honey, banana and protein powder to blender.
  2. Blend until smooth.

Cranberry Breakfast Smoothie

Probably because Thanksgiving is getting closer, I have really been into cranberries.  I told you I have two yummy cranberry recipes for you and this smoothie is one of them.  I promise I won’t do all smoothies but they are so good and easy!  I got this Oster personal blender for my birthday and I love it so much.  We are good friends.  It totally jives with my morning routine so it gets to stay in my house. 

Anyway, the smoothie has Greek yogurt in it so if you don’t do dairy just leave it out and add a little extra coconut milk.  I don’t mind a little extra protein.  One more smoothie thing then moving on, I added these cute little black seeds I have been reading about.  Apparently, they are super good for you.  Smoothies are an awesome way to add in little health boosters and still feel like you are having a treat for breakfast.  If I think it’s filling enough for breakfast, believe me, you will too.

So I have the best news for you!  You know how I told you I hate baking?  Well, it was bothering me that you were going to miss out on a “desserts” category in my little blog so I enlisted a great baker to help us out!  She’s been working her tail off coming up with some Paleo treats.  You guys just sit back and relax with my dishes for now, but know you’ll have Paleo desserts very soon.  You’re welcome.

Alright, so last week I left off by saying I would talk about “cheat” days.  Everyone loves to say “cheat day”, you cheaters.  Ideally, when you take on the Paleo lifestyle you are doing it to be healthy.  Losing weight is also a big plus, I know.  If you are eating foods that are bad for you all of the time then you are just hurting yourself.  In my case, my body reacts badly to inflammatory foods (the grain and sugar and such), so the less of those foods the better.  I have discovered if I can go a month to six weeks without “cheating” the world is just better for me. 

I used to say Sunday nights at our life group meetings were my “cheat” meals.  Well, that turned into I can eat whatever I want for lunch as well because that day would be ruined anyway, then the day turned into the whole weekend.  I absolutely cannot eat sugar and grain all weekend and not suffer the consequences.  So for me, after I’ve been eating all Paleo food for a month or so, I’m feeling well and performing well, then I will allow myself whatever I want.  Oh man and that is usually a cheeseburger!  What??  I can’t help it.  The key is, have the cheeseburger, enjoy every bite and DO NOT FEEL GUILTY.  The next day I’m back at it and all is well.   Any questions??

Also, in case you are beside yourself with worry, my marathon training is still going well.  Tomorrow we have a super fun track workout.  If you’re at the track tomorrow morning just look for the blur, that’ll be me (in my dreams).

  1. 1 cup unsweetened coconut milk
  2. 1 cup fresh cranberries
  3. 3 tbsp. plain, full fat Greek yogurt
  4. 1 frozen banana (sliced before freezing)
  5. 1 tsp. maple syrup
  6. pinch of black seeds (optional)
Instructions
  1. Add the coconut milk and cranberries and blend until smooth.
  2. Add the rest of the ingredients and blend.

Pumpkin Almond Iced Coffee

I got a picture today before I drank the whole thing in about 2 minutes!  I’m digging this coffee.  I’ve been drinking it every morning for my second breakfast.  See, I usually have half of an Isopure protein shake on the way to workout and half on the way home, then I have the two eggs we talked about last week.  Once the kids wake up a couple of hours later I’m ready to eat again.  Sometimes I cut up an apple and take it along but lately its been this delicious iced coffee.  coffeefront

As you get to know me a little better you will start to realize I eat as much as a grown man.  I try to change sometimes…not really.  I love food.

This weekend will be another big weekend.  One of my five year old twins, Ty, and I will be running his second 5k, the Jailbreak Run Fest in Royse City, TX.  He’s my little running buddy.  Hopefully I don’t have to carry him as much as I did last time.  In all seriousness though, I think he’s going to be an outstanding athlete.  We’ll see soon enough I suppose.

Then Sunday I have 18 miles on the plan with a handful of my buddies.  Oh man, I’m a little nervous.  18 will be a new distance for me.  I’ll get straight out of bed with a prayer Sunday morning you can be sure.  Don’t worry, I’ll have lots of weekend pictures to share.  You were worried right?

  1. 1 cup black coffee cooled
  2. 1 heaping tbsp. pumpkin puree
  3. 1 heaping tbsp. pure maple syrup
  4. 1 heaping tbsp. unsweetened almond butter
  5. 1/3 cup unsweetened coconut milk
  6. 1/8 tsp. pumpkin pie spice
  7. handful of ice
Instructions
  1. Combine all ingredients including ice and blend.
  2. Serve over ice.
